Homemade Yummy Salted Caramel Fudge
I've been spending a lot of time at the gym lately, and I'm still waiting for the 'feeling fitter' bit to kick in. at the moment I just feel absolutely shattered, and I'm craving food, particularly sweet stuff. That's the trouble with exercise it just gives me an appetite! So today I decided to make some fudge, and I apologise now to everyone on a diet 'cos this stuff is totally irresistible and like me, you'll probably scoff the whole lot in one sitting. So here goes.
You need a 397g tin of Caramel condensed milk
100g of brown sugar
90g unsalted butter
3-4 drops of vanilla extract
First line out a 20cm square tin. Now, I have a great fondness for this foil backed parchment, its is so much more manageable than greaseproof paper, the foil backing helps it stay put, and I never find the need to grease it, so saved a couple of calories there!
Pop all your ingredients except the vanilla extract into a heavy saucepan. Heat gently until the butter has melted, and the sugar has dissolved. Turn up the heat a little, if necessary, so it heats up and bubbles away. Stir continuously, for about 15-20 minutes, make sure it doesn't burn. It should start to darken and thicken, and after about 15 minutes drop a bit into icy water. If it turns to a soft ball that you can roll between your fingers, rather than a gloopy mess, then its ready! If not, heat and stir a little longer.
.....Once it's ready, stir in a couple of drops of vanilla extract then quickly pour into the prepared tray.
Sprinkle salt on the top. I like a lot, and I love the contrast of sweet and salty and like the crunch of salt in my teeth, but I'm a bit odd, so you might like to put yours through the grinder beforehand!
As it sets, I mark it out, so I get perfect pieces, but you can just leave it and smack it with the rolling pin. That's quite therapeutic if you have some pent up anger you need to get rid of safely!
